Cauliflower Mash

Ingredients

  • 1 head Cauliflower washed and chopped
  • 1 tsp Grass-fed butter ghee or olive oil blend spread
  • 1 tsp of salt
  • 1 tbsp chopped rosemary
  • 2 tbsp Parmesan Cheese

Instructions

  • Steam chopped cauliflower until soft. Drain excess liquid. Place in a blender with butter, salt and pepper. Blend until smooth.
  • Transfer to a serving bowl and stir in rosemary and cheese.

Notes

Makes 4 servings.
Cauliflower is a healthy alternative to potatoes although much lower in calories and higher in phytonutrients to help the body ward off disease. Be adventurous and try using purple, orange or green varieties of cauliflower.
